It’s no wonder that picturesque Charleston, Travel + Leisure’s top- rated U.S. city, has become a haven for destination weddings and splendid Southern affairs. Within this vibrant and sought-after locale lies Hamby Catering, the city’s oldest caterer. We chatted with their president and owner, Candice Hudnall, about how her daily to-dos translate into catering some of the most delicious and charming nuptials in the Southeast — and what to look for when it comes to hiring a caterer.
LOWCOUNTRY LOCAL
Charleston resides in South Carolina’s Lowcountry, a place where time runs a little slower, conversation is a little sweeter and the breeze blows a little warmer. Though it can hold its own against the world’s most glittering cities and welcomes visitors from around the globe, Charleston is very protective over one thing — its own. This disposition is a common thread amongst landmark southern cities. Perhaps this is the very reason these cities emit such a warm, inviting glow. “Hamby Catering, and Charleston in general, prides itself on its community mindset; sourcing everything locally takes top priority in our day-to-day operations,” says Hudnall. “We are so grateful to be in an area where so many of our ingredients are at our fingertips. Fresh provisions, produce and more come from our backyard. And here at Hamby, we’ve made the commitment to source within a certain radius for nearly all of our offerings.”
Deeply ingrained in Hamby Catering’s culture is respect. “We’d be remiss if we didn’t touch on just how important the relationships are that we have cultivated over the years with other industry professionals; that’s another hallmark of the South. Though Charleston is a growing city, we still have a small-town feel with respect for our partners and vendors,” says Hudnall.
If regional flavors are a must for your wedding, interview your potential caterers about their ingredient sourcing and menu inspiration. Not only does a locally focused menu support the community, it also prioritizes freshness and quality.
A HISTORY OF FLAVOR
Food trends come and go with the seasons it seems; need we be reminded of the viral whipped coffee we all tried to make at the beginning of the pandemic? While keeping a finger on the pulse of what’s current in the culinary industry, Hamby also knows the importance of staying true to the flavors synonymous with the South. We’re talking everything from shrimp and grits to classic carving stations, all slanted towards classics with an innovative twist.
“Think about the brunch debrief you have with your girlfriends the night after a big event. What’s the first thing you bring up — besides the evening’s shenanigans? The food,” says Hudnall. “Though an experimental entrée may seem like a fun idea at the time, guests deserve a meal that leaves them talking — in a good way.”
When deciding on your wedding catering, look for menus that feature twists on classics, as well as Southern staples, to fully round out the charm of a southern destination. “To us, our shrimp and grits are just as important as twinkling lights and Spanish Moss,” jokes Hudnall. “Our menus reflect the history, quality and simplicity of a traditional, delicious Lowcountry meal.”
Infusing local flavors into your wedding will immerse your guests in the spirit of your celebration, whether you wed in the city you live in, your hometown or another charming destination.
MARRYING STYLE, SOPHISTICATION AND SOUTHERN HOSPITALITY
It’s true when they say the South leads the charge in hospitality. It also has a unique style that you won’t find anywhere else; a groom might wear a peacock bowtie, rich hues can dominate the rentals and the venues themselves transcend your typical reception hall and touch on the city’s storied history. “Hamby strives to tell a story through our service, from the first tasting to the final course,” says Hudnall. “We can start with our rendition of the bride and groom’s first date meal and end with crowd pleasing dessert and late-night stations that go beyond your typical slice of cake.”
Hamby Catering’s approach has not been lost on the Holy City; they’ve continuously been recognized as a top caterer and trusted by both locals and visitors. “We don’t take the city’s trust in us lightly and remember it with each new event we lead,” says Hudnall.
The beloved nature of southern cuisine makes for a great beginning. May your marriage be blessed with the same timelessness as the dishes passed down from generation to generation.
